Most Delicious Recipe For Diabetic Part 2

As promise, Here are continous recipes that I have taken from D.I.D programme. I was hoping that with all the recipes compilation, you will try to cook the dishes.

OYSTER OMELETTE

Ingerdients

2 whole eggs & 2 egg whites, lightly beaten
1 tsp light soya sauce
Pinch of salt
Pepper to taste
1 tbsp olive oil
1 tbsp chopped fresh garlic
1 tbsp chopped fresh chillie

Garnish

1 stalk lemon grass, chopped
4 fresh shucked oysters

Method

1. In a bowl, break 2 while eggs & 2 egg whites. Seasoned with light soya sauce, salt & pepper.
2. Heat oiil in a frying pan, & lightly saute the garlic and chillies.
3. Pour in the beaten eggs, swirling it around in the pan, until an omelette is formed, about 2 minutes.
4. Place omelette in a plate & garnish it with spring onions
5. Toped with freshly shucked oysters.

CLAYPOT RICE

Ingredients

4 dried black mushrooms
2 boneless skinless breast chicken, cut into chunks
1 tbsp light soy sauce
1 tbsp rice wine
2 slices peeled ginger, sliced
2 cloves of garlic, smashed
1 tsp sesame oil
2 cuos chicken stock or wat
1 cup washed brown rice (wash and drain)

Garnish

Freshly chopped coriander
Fresh red chillies

Dressing

1 tsp light soy sauce
1 tbsp vegetable oilo1 tsp rice wine or to taste (optional)

Methods
1. Preheat oven to 180 degfree celcius
2. Soak mushrooms till soft. Then discard stms and slice thinly
3.Marinate chicken with ginger, garlic, soy sauce and rice wine for at least 10 minutes
4. Heat a claypot or flameproof dish, large enough for the rice, over medium-heat until hot
5. Pour in the stock and bring it to a boil. Add the drained rice and softened mushrooms, chicken, ginger and garlic and marinate. Stir well
6. Cover the clay pot and transfer to the pre-heated oven
7. bake for 25 minutes or until liquid is absorbed and a light crust formed on the bottom of the rice
8. Scatter coriander and chiili over the top and serve right from the clay pot
9. Ofer soy sauce dressing on the side
